We heard the rooster call early this morning, at about 6:30 am.  The breeze quietly ruffled the leaves as we drudged to prepare for breakfast at 7:15.  Breakfast this morning featured a Nicaraguan specialty, white pineapple, that’s right, its white and difficult to find in the United States.  It has an uncanny resemblance to regular yellow pineapple, but its white, and more dulcet.  After breakfast, we had the pleasure of meeting with a local Nicaraguan Professor Cirilo Otera.  He spoke about the local and national economy, and the role of the government and workforce.  He then took many questions from […]
